Dear Dave,
Today (May 1st) is Travel Agent Day!!! Did you
know that?
If I understand it correctly, Travel Agent Day
means if you go outside and see your shadow
we've got another 6 weeks of winter. OMG that's
not good. Hmmm...maybe I got that wrong. Google
it.
Seriously, thank you for all the hard work you
do. Being a travel agent is a tough job and we
really appreciate it. Love ya, mean it!!!

As a special treat for Travel Agent Day I'm
going to share an amazing healthy recipe with
you...
Last month I was mentioning in the newsletter
that I've been trying to get in shape and I've
been working out and eating healthier. Well, my
sister (Laurel) gave me a super heathy recipe
for chocolate brownies and they are soooo good.
Don't let the ingredients scare you...they are
so delicious and they are packed with
power-foods. Try them and let me know what you
think.
The Marsh Muffin-Top Recipe

1-19 oz can of black beans, drained and rinsed
well |

3
eggs |
|
1/4 cup of coconut oil |
|
1/2 cup honey |
|
1
tablespoon vanilla extract |
|
1/3 cup, sifted cocoa |
|
1
teaspoon baking powder |
|
1/2 teaspoon baking soda |
|
1/2 cup hemp hearts |
Place all the ingredients in a blender or food
processor and blend until it is all liquid with
no lumps. Pour into cake pan or cup cake papers
in a muffin tin.
Bake
in a preheated 350 degree oven for 25-30 minutes
or until a toothpick inserted in the center
comes out clean. (In my oven it took a full 35
minutes, so make sure to test your brownie).
Cool for 10 minutes. Remove from pan, and cool
completely. Cover and refrigerate over night.
In my opinion this tastes best cold straight out
of the fridge. This cake is suitable for gluten
free, lactose intolerant diets.
